Measure the base: In a medium bowl or jar, combine 2 tablespoons chia seeds with 1/2 cup milk.
This is one serving. For multiple servings, multiply as needed.
Flavor it: Stir in 1/2 teaspoon vanilla extract, a small pinch of salt, and a pinch of cinnamon if using. Add 1 tablespoon unsweetened shredded coconut if you like.
Stir well—really well: Whisk for 30–45 seconds to break up any seed clumps so it thickens evenly.
Rest and re-stir: Let the mixture sit for 5–10 minutes, then stir again to redistribute seeds.
This prevents a heavy layer at the bottom.
Chill: Cover and refrigerate at least 2 hours, ideally overnight, until it’s thick and pudding-like.
Adjust texture: If too thick, stir in a splash of milk. If too thin, add 1–2 teaspoons chia seeds, stir, and chill 10–15 more minutes.
Top and serve: Add berries, sliced fruit, a dollop of nut butter, or chopped nuts. Serve cold.
