Air Fryer Banana Fritters - Crispy, Golden, and Easy

Ingredients
  

  • 2 large ripe bananas (the spottier, the better)
  • 1 large egg
  • 1/3 cup all-purpose flour (or gluten-free blend)
  • 2 tablespoons cornstarch (for extra crispiness)
  • 2–3 tablespoons sugar (granulated, brown, or coconut sugar)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine salt
  • 1 teaspoon vanilla extract
  • 1–2 teaspoons milk or water (if needed to adjust batter)
  • Neutral oil spray (avocado, canola, or olive oil spray)
  • Optional finishes: powdered sugar, maple syrup or honey, extra cinnamon, or a drizzle of melted chocolate

Method
 

  1. Preheat the air fryer. Set it to 375°F (190°C) for 5 minutes so the basket is hot and ready.
  2. Mash the bananas. In a medium bowl, mash the bananas until mostly smooth with a few small lumps.
  3. Mix the wet ingredients. Whisk in the egg and vanilla until well combined.
  4. Add the dry ingredients. In a separate bowl, combine flour, cornstarch, sugar, baking powder, cinnamon, and salt. Fold into the banana mixture. The batter should be thick but scoopable. If it looks too stiff, add 1–2 teaspoons of milk or water.
  5. Prep the basket. Lightly spray the air fryer basket with oil. This helps prevent sticking and promotes browning.
  6. Scoop the batter. Use a tablespoon or small cookie scoop to drop mounds of batter into the basket, leaving a little space between each. Aim for 1.5–2 inches wide; this size cooks evenly.
  7. Air fry the first side. Cook at 375°F (190°C) for 5–6 minutes. The fritters should look set and lightly golden on top.
  8. Flip and finish. Gently flip each fritter with a silicone spatula or tongs. Spray lightly with oil and cook another 4–6 minutes, until deep golden and crisp at the edges.
  9. Check doneness. The centers should be cooked through and springy, not wet. If needed, add 1–2 extra minutes.
  10. Repeat with remaining batter. Work in batches to avoid overcrowding the basket.
  11. Serve warm. Dust with powdered sugar, drizzle with maple syrup, or finish with a sprinkle of cinnamon. They’re fantastic plain, too.
